Jack Arturo b1265144c0 fix: defensive coding for user mappings, remove assignees field 
- Add try/catch and defensive checks in saveSettings for user_mappings
- getUserMappings now fetches from User model (not just saved mappings)
- Remove assignees text field (watchers dropdown replaces this UX)
