 DEV: Add plugin APIs for extending models (#41655) 
Replaces soft-deprecated `modifyClass`/`modifyClassStatic` on models
with more intentional plugin API methods: `addModelField`,
`addModelAccessor`/`addModelGetter`/`addModelSetter`,
`addModelMethod`,`addModelSaveProperty`, and `addModelCallback`.

Adds value and behavior transformers for smaller, specific overrides
that existing plugins need.

This also moves the bundled plugins completely off `modifyClass`.
